Sambal are slightly different here, chopped onion, tomato, cucumber and chilli drizzled with vinaigrette, or grated carrots, tomato, onion and chilli dressed the same. 

Each region, sometimes each family has a recipe with totally different flavouring, it must have spices to bring out full tasting pleasure!
