Good evening Hivers, I hope you had a fantastic Thursday.... Today, I wanted to share with you the recipe for some delicious "cupcakes", taking advantage that I finally managed to buy the right mold, but my mother asked me to make a dessert with her "favorite fruit", as she is newly operated I am indulging ALL her "culinary cravings", so that her recovery will be faster. I have read that laughter increases "endorphin" levels, I am sure that indulging her with her "favorite dishes", works like *little happy pills*, so that the healing process she is going through is less painful... My mom, really enjoyed her snack and I was VERY happy to see her smile and ask with a mischievous look: A BIGGER piece of cake. :)

Here is how to prepare in an "easy and simple" way an exquisite **"sponge cake decorated with passion fruit pastry cream"**.

> Buenas noches Hivers, espero que hayan pasado un fantástico jueves... Hoy, deseaba compartir con ustedes la receta de unos deliciosos "ponquesitos", aprovechando que por fin logré comprar el molde adecuado, pero mi madre me pidió que realizara un postre con su "fruta favorita", como está recién operada estoy complaciendo TODOS sus "antojos culinarios", para que así su recuperación sea MÁS rápida... He leído que la risa aumenta los niveles de "endorfinas", estoy segura que consentirla con sus "platos favoritos", funciona como *pequeñas píldoras de felicidad*, para que el proceso de sanación por el que está pasando sea MENOS doloroso... Mi madre, disfrutó mucho su merienda y yo quedé MUY feliz de verla sonreír y de pedir con una mirada pícara: Un trozo MÁS grande de pastel. :)

* You will need the following ingredients: 2 cups of wheat flour, 1 teaspoon of baking powder, 2 eggs, 1 cup of sugar, 1/2 cup of sunflower oil and 1/2 cup of passion fruit juice.


* To make the cake and the pastry cream, I had to use 8 passion fruit, it will depend on the content of the fruit, as sometimes they feel heavy, but when opened they are a little dry.



>* Necesitarán los siguientes ingredientes: 2 tazas de harina de trigo, 1 cucharadita de polvo de hornear, 2 huevos, 1 taza de azúcar, 1/2 taza de aceite de girasol y 1/2 taza de zumo de maracuyá. 

>* Para realizar el pastel y la crema pastelera, tuve que utilizar 8 maracuyás, dependerá del contenido de la fruta, ya que a veces se sienten pesadas, pero al abrirlas están un poco secas.

* We start preparing the cake: Add the eggs to a bowl, beat at "high" speed for 2 minutes until they double in size. Add the "sugar" and mix again until you get a uniform consistency and free of lumps.

>* Empezamos preparando el bizcocho: Agregamos a un bowl los huevos, batimos a velocidad "alta" durante 2 minutos hasta que doblen su tamaño. Colocamos el "azúcar" y volvemos a mezclar hasta conseguir una consistencia uniforme y libre de grumos.

* Add our succulent mixture to a greased and floured baking dish. Bake at 180º for approximately 50 minutes or until it is ready. Everything will depend on the power of the oven, on this occasion my cake was ready in 1 hour.

>* Añadimos nuestra suculenta mezcla a un envase refractario, previamente enmantequillado y enharinado. Horneamos a 180º durante 50 minutos aproximadamente o hasta comprobar que está listo. Todo dependerá de la potencia del horno, en ésta ocasión mi pastel estuvo listo en 1 hora.

* While waiting for the baking process, I am going to explain how I prepared my delicious "passion fruit pastry cream". 

* Use: 300 ml of passion fruit juice, 2 egg yolks, 1 tablespoon of butter, 30 gr of cornstarch and 60 gr of sugar. 

>* Mientras esperamos el proceso del horneado, les voy a explicar como preparé mi deliciosa "crema pastelera de maracuyá". 

>* Utilice: 300 ml de zumo de maracuyá, 2 yemas de huevo, 1 cucharada de mantequilla, 30 gr de fécula de maíz y 60 gr de azúcar.

* Add enough passion fruit juice (1/4 cup) to a bowl to mix with the egg yolks and cornstarch. 

>* Añadimos a un plato hondo la cantidad suficiente de zumo de maracuyá (1/4 taza) para mezclar con las yemas y la fécula de maíz.

* Mix until well integrated (reserve).

* Place the "passion fruit juice" and the "sugar" in a non-stick saucepan. Heat until the sugar dissolves.

>* Colocamos en una olla antiadherente el "zumo de maracuyá" junto con el "azúcar". Calentamos hasta que el azúcar se disuelva.

* Add the mixture of cornstarch and egg yolks. Mix constantly to prevent it from sticking to the bottom of the pan and forming lumps in the mixture.

>* Incorporamos la mezcla de "fécula de maíz y yemas". Mezclamos de forma constante para evitar que se pegue en el fondo de la olla y se formen grumos en la mezcla.

* After 20 minutes of cooking, our exquisite passion fruit pastry cream took the right consistency... It was VERY creamy and tasty!

>* Transcurridos 20 minutos de cocción nuestra exquisita crema pastelera de maracuyá tomó la consistencia adecuada... Quedó MUY cremosa y sabrosa!

* Remove the pan from the stove, add the butter and mix until it is melted.

>* Retiramos la olla de la hornilla, añadimos la mantequilla, mezclamos hasta comprobar que se derritió.

* Add the "pastry cream" to a dish or deep bowl, cover with plastic wrap, or you can also use a plastic bag. It is important that the paper is in contact with the cream. We wait for it to cool to room temperature, if you wish to use it the next day you can reserve it in the refrigerator.

>* Añade la "crema pastelera" a un plato o recipiente hondo, cúbrela con papel film o también puedes utilizar una bolsa de plástico. Es importante que el papel esté en contacto con la crema. Esperamos a que se enfríe a temperatura ambiente, si quieres utilizarla al día siguiente puedes reservarla en la nevera.

* Friends, whenever I prepare this dessert I always love to use the seeds of our exquisite tropical fruit to complete the decoration. I used 6 tablespoons of passion fruit seeds and 1 tablespoon of sugar. I cooked over medium heat, until I got a creamy syrup.

>* Amigos, siempre que preparo éste postre me encanta utilizar las semillas de nuestra exquisita "fruta tropical" para completar la decoración. Utilicé 6 cucharadas de semillas de maracuyá y 1 cucharada de azúcar. Cociné a fuego "medio", hasta obtener un almíbar cremoso.
