Preparamos hallacas - Una comida tradicional en mi país, en la temporada navideña. / We prepare hallacas - A traditional meal in my country during the Christmas season.

Hey amigos, que tal están?, saben hace mucho tiempo quería realizar este post, y no había tenido tiempo de redactarlo hasta ahora, el procedimiento para preparar esta comida típica de mi país es sumamente largo, además la hallaca suelen compararla mucho con el "tamal", pero lo cierto es que no tienen mucho parecido, ya que es preparada con una especie de guiso que puede ser de pollo, carne de res o cerdo, en la mayoría de los casos contiene los 3 tipos de carne. Como aderezos puede tener, aceitunas, uvas pasas, alcaparras, zanahoria y papas encurtidas, además de sal y otros ingredientes.
Por lo cual quiero compartir con ustedes el procedimiento que nosotros hicimos para preparar hallacas.

Comencemos con la preparación del guiso, utilizaremos carne de res la cual picaremos en cuadros pequeños, carne de cerdo que de igual manera picaremos y a ambas le agregaremos una pizca de sal, pimienta y orégano.

El siguiente paso es cocinar los 3 tipos de carne, pollo, res y cerdo, todo en ollas separadas hasta que estén blandos.

En el momento que el agua se evapore vamos a remover el poco que queda, de esta manera retiraremos el pollo para mecharlo en tiras finas, la carne de res y cerdo la cocinaremos en una olla sin agua por unos pocos minutos para remover el resto de agua que tenga.

Cuando tengamos todos listo, vamos a separar los ingredientes en tazas distintas, y comenzaremos a preparar una especie de salsa con algunos ingredientes como cebollín, ají dulce, cebolla y pimentón, así que vamos a picar todos estos aliños en trozos pequeños.
> When we have all ready, we will separate the ingredients in different cups, and we will start preparing a kind of sauce with some ingredients like chives, sweet peppers, onions and paprika, so we will chop all these dressings in small pieces.

Los aliños los vamos a sofreír con un poco de aceite mezclado con onoto, para esto cocinaremos una cucharada de granos de onoto en abundante aceite, hasta que este se torne color naranja. Colaremos los granos de onoto ya que solo utilizaremos el aceite que vamos a verter en un caldero grande, de igual manera los aliños para sofreírlos. 
> We will fry the dressings with a little oil mixed with onoto, for this we will cook a spoonful of onoto grains in abundant oil, until it turns orange. We will strain the onoto grains since we will only use the oil that we are going to pour in a big pot, in the same way we will use the seasonings to fry them.

Cuando los aliños estén bien sofreídos los dejaremos enfriar un poco para luego licuarlos, de esta manera la salsa quedará un poco mas liquida. Cuando termine de licuar la llevaremos nuevamente al caldero.

Lo siguiente es añadir el pollo en la salsa, la carne de res, la carne de cerdo y mezclar todo muy bien, de manera que la salsa cubra los 3 tipos de carne.

Vamos a preparar un poco de masa con harina de maíz precocida, y también le añadiremos un poco de aceite con onoto para darle un tono naranja.

Para finalizar los ingredientes básicos, cortamos algunas rodajas de papas y zanahorias y las cocinaremos.

Con todo listo sobre una mesa comenzaremos a preparar nuestras hallacas, además no nos olvidaremos de buscar los otros ingredientes principales, las aceitas, pasas y alcaparras.
De igual manera, las hojas para hallacas son hojas de plátano cocidas, las debemos lava y limpiar muy bien antes de comenzar la preparación.
> With everything ready on a table we will begin to prepare our hallacas, besides we will not forget to look for the other main ingredients, the oils, raisins and capers.
In the same way, the leaves for hallacas are cooked banana leaves, we must wash and clean them very well before starting the preparation.

Para preparar una hallaca, lo primero que debemos hacer es añadir una bola de masa sobre la superficie de la hoja, luego la vamos a aplanar con nuestras manos hasta darle una forma de circunferencia.
> To prepare a hallaca, the first thing we must do is add a ball of dough on the surface of the leaf, then we are going to flatten it with our hands until we give it a circumferential shape.

Luego añadiremos el guiso y el resto de los ingredientes sobre la masa.

Para finalizar envolvemos la hoja en todos los extremos y la amarramos con hilo pabilo para evitar que se desate.
> To finish we wrap the sheet in all the ends and we tie it with wire to avoid that it is untied.

El proceso se repite una y otra vez hasta finalizar la cantidad de hallacas deseadas, ahora lo que resta es colocarlas a hervir en una olla con abundante agua por 30 min min.
> The process is repeated over and over again until the desired amount of hallacas has been completed. Now all that remains is to put them to boil in a pot with plenty of water for 30 minutes.

Transcurridos los 30 min, nuestra hallaca estará lista para comer y simplemente la retiramos de la hoja, y la servimos en nuestro plato.
