It is, to put it in some way, a way to skip the step that makes this recipe also known as delicacy, blancmange, arequipe or cajeta, depending on the country in which it is made and according to who you ask.</p>\n<p><br></p>\n<p>And we say skip a step because the dulce de leche consists basically of one thing: caramelize the whole milk thanks to the sugar. Both ingredients are boiled, with a pinch of sodium bicarbonate so that the caramelisation is accelerated, and depending on whether the recipe goes further you can even add cream, although it is not usual. This milk, although it demands to be cow if we follow the original preparation, can be similarly goat, although it is not very usual to use it alone. In Mexico, it uses a combination of cow's and goat's, giving rise to a very special flavor, presented as candy without further ado or transformed into sweets.</p>\n<p><br></p>\n<p>In Colombia, however, although only cow's milk is used, the presentation of the dish is accompanied by fresh frozen milk or hardens while it is coated with powdered sugar, resulting in the latter case very creamy inside.</p>","appDepth":2,"appParentPermlink":"fkpjxz53w","appParentAuthor":"stmitbackpacker","musingAppId":"aU2p3C3a8N","musingAppVersion":"1.1","musingPostType":"answer"}"
