<div class="text-justify">Yesterday while searching for content to curate, I came across a post by my dear @pialejoana, from a <a href="https://peakd. com/hive-120586/@pialejoana/contest-creative-fast-and-delicious-lunch-award-10-hive-esp-contest-creative-fast-and-delicious-lunch-award-10-hive">contest</a> where she invites us to share quick, easy, and delicious recipes for lunch, and I just made myself this delicious Egg Soup that couldn't be easier and faster. When I studied at the university and lived alone, I used to prepare it very often because it is really delicious and you can make it with the vegetables you like and it cooks in a jiffy. Some people call it soup raises dead, and others use it to get rid of a hangover after a good night out, but I make it whenever I feel like it because I really like it.

And now that I think about it, about 10 years ago, when my life was torn between work and parties, this was my great ally to go to work quietly, because it is also a comforting but light meal, so it is perfect for lunch at the office and not fall asleep after lunch hahaha. Here it has been raining yesterday and today and the truth is that a good soup is not bad for the storm, and for when we have not taken anything out of the freezer, some eggs are the best solution to add protein to a good soup. At home, everyone has been satisfied with this delicious soup to which I have also added letter paste and it is the best way for Mi Mathias to eat a good portion.

<li> 2 medium potatoes cut in cubes. </li> 
<li> 2 medium carrots, diced. </li> 
<li> 2 diced octopus. </li>

<li> 400 gr of pumpkin / auyama, cut into cubes. </li> 
<li> 400 gr of yucca cut into cubes. </li>
<li> 1 medium onion, finely chopped. </li> 
<li> 2 finely chopped chili peppers. </li>
<li> 1/2 red bell pepper, finely chopped. </li>
<li> 2 tablespoons of salt. </li>
<li> 1/2 Tbsp ground cumin. </li>
<li> 1 Tbsp chicken broth powder. </li>
<li> 1 Envelope of alphabet soup with chicken. </li>
<li> 1 Tbsp sunflower oil. </li>

To begin we bring the water to a boil, once boiling add salt and yucca, and let cook for about 10 minutes, after this time adds the rest of the vegetables, celery, octopus, potatoes, carrots, and pumpkin, stir and let cook covered for about 10 minutes more.

To complement it I add cheese cut into cubes and accompany with a piece of good bread, I assure you that with a good portion of this soup will be satisfied and recharged with energy, the truth is that the name of soup raises the dead is not given in vain, because it is a soup that brings enough energy, and we can also make it in 30 minutes, because while the water boils we peel and cut the vegetables, not to mention the fact that it does not require much culinary knowledge or technique to prepare it, and it has saved my lunch today, to be honest.

<div class="text-justify">Ayer mientras buscaba contenido para curar, me encontré con una publicación de mi querida @pialejoana, de un <a href="https://peakd.com/hive-120586/@pialejoana/contest-creative-fast-and-delicious-lunch-award-10-hive-esp-concurso-almuerzo-creativo-rapido-y-delicioso-premio-10-hive">concurso</a> en donde nos invita a que le compartamos recetas rápidas, fáciles y deliciosas para un almuerzo, y justamente me he preparado esta deliciosa Sopa de Huevo que más fácil y rápida no puede ser. Cuando estudiaba en la universidad y vivía sola, la preparaba muy seguido porque es realmente deliciosa y la puedes hacer con las verduras de tu gusto que además se cocinan en un santiamén. Algunos le dicen sopa levanta muerto, y otros más la usan para sacar la resaca después de una buena noche de farra, yo realmente la preparo siempre que me provoca, porque me gusta mucho.

Y ahora que lo pienso, por allá hace unos 10 años atrás, cuando mi vida se debatía entre el trabajo y las fiestas, esta era mi gran aliada para ir a trabajar tranquila, pues además es una comida reconfortante pero liviana, así que, queda perfecta para un almuerzo en la oficina y no quedarte dormido después de la comida jajaja. Aquí ha estado lloviendo ayer y hoy y la verdad es que una buena sopa no cae nada mal para el temporal, y para cuando no hemos sacado nada del congelador, unos huevos son la mejor solución para agregarle proteína a una buena sopa. En casa todos han quedado satisfecho con esta deliciosa sopa a la que además le he agregado pastita de letras y es la mejor manera para que Mi Mathias se coma una buena porción.

Básicamente esta es una preparación que se hace sola, porque lo que más nos dará trabajo es lavar, pelar y picar las verduras, lo demás lo hará el fuego de la cocina. Acompáñame y te muestro como preparar esta deliciosa y rápida sopa de huevo.

<li> 4 Huevos. </li>
<li> 2 Papas medianas cortadas en cubos. </li>
<li> 2 Zanahorias medianas cortadas en cubos. </li>
<li> 2 Ocumos cotados en cubos. </li>
<li> 2 Arracacha mediana cortadas en cubos. </li>
<li> 400 gr de calabaza / auyama, cortada en cubos. </li>
<li> 400 gr de yuca cortada en cubos. </li>
<li> 1 Cebolla mediana finamente cortada. </li>
<li> 2 Ajíes finamente cortados. </li>
<li> 1/2 Pimentón rojo fiñemente cortado. </li>
<li> 2 Cdas de sal. </li>
<li> 1/2 Cda de comino molido. </li>
<li> 1 Cdta de caldo de pollo en polvo. </li>
<li> 1 Sobre de sopa de letras con pollo. </li>
<li> 1 Cda de aceite de girasol. </li>

Para comenzar llevamos el agua a hervor, una vez hirviendo le agregamos la sal y la yuca, y dejamos cocinar por unos 10 minutos, pasado este tiempo agregamos el resto de las verduras, apio, ocumo, papas, zanahorias, y calabaza, revolvemos y dejamos cocinar tapado por unos 10 minutos más.

Por otro lado, iremos salteando la cebolla, ajíes y pimentón, con las especias, y la cucharada de aceite, cuando la cebolla haya cristalizado, agregamos este sofrito a la sopa, revolvemos y dejamos cocinar por otros 5 minutos tapado.

Pasados los 5 minutos, agregaremos el sobre de sopa de letras y revolvemos, para continuar agregando los huevos de uno en uno sin revolver. dejamos cocinar otros 5 minutos mas a fuego medio bajo y tapado. Apagamos el fuego y dejamos reposar por unos 15 minutos antes de servir, esto para que los sabores se concentren.

Para complementar le agrego queso cortado en cubos y acompaño con un buen pan, les aseguro que con una buena porción de esta sopa quedaran satisfechos y recargados de energía, la verdad es que el nombre de sopa levanta muertos no se lo dan en vano, pues es una sopa que aporta bastante energía, y que además podemos hacer en 30 minutos, pues mientras hierve el agua vamos pelando y cortando las verduras, eso sin contar el hecho de que no se requiere de mucho conocimiento culinario ni técnica para prepararla, y a mí me ha salvado el almuerzo de hoy para ser sinceros.

Sinceramente nunca he comido sopa de huevo... Antes, cuando era joven (me siento viejita 🤣) era muy muy mal comer. Recuerdo que mi mamá preparaba, pero no comía. 

Sin embargo, luego de ver tu receta, se me ha antojado... prepararé una pronto. Se ve sumamente deliciosa, me encanta el color. Además de que en la actualidad, me gusta mucho la sopa. Gracias por traer recuerdos aquí. 😊
