<div class="text-justify"> I am certainly not a fan of common social networks, however, when I want to innovate in my recipes one of the sites where I mainly turn to is Instagram, in the first instance because there things are practical and fast, the format demands it so to speak, so I easily fall in love with some recipe or another, and often end up more disappointed than happy, however, this was one of those occasions in which I was more than satisfied with the result, and therefore I share the result with you. The moist chocolate cakes are undoubtedly the most delicious and addictive so to speak, and its texture and flavor invite you to eat a good portion and probably ask for a second one.

Yesterday I was honored with an invitation to a meeting with wonderful people that I could not refuse and it occurred to me that it was fair and necessary to share with them something of what I enjoy doing the most, preparing delicious desserts to get some smiles. This preparation would undoubtedly be the one chosen and I would take the opportunity to take some pictures to share with them the process, the results were definitely as expected according to the reviews of the recipe and the image of it on Instagram, it is truly a recipe that I would recreate again. Of course, I could not help but make some personal adjustments, just because I thought it was convenient, but something that would not even be noticed in the taste of it.

The star ingredient in moist chocolate cakes is the oil, which when combined with cocoa counteracts the effect of leaving the preparations dry, and another of the things that lends moisture to it is the use of buttermilk, which is nothing more than the addition of an acid medium in the milk used in the preparation, and this was the change that I made to the original recipe, since it only contains milk, but enough chatter and join me to see how I prepare it.

To begin with this preparation we sift the dry ingredients, wheat flour, baking powder, salt and unsweetened cocoa, and set aside, on the other hand, we prepare the buttermilk which is the variation that I am doing to this recipe, for this we add the lemon juice to the cup of milk and stir, we will see how it thickens and cuts the milk a little, set aside both mixtures.

With the oil already integrated to the mixture we begin to integrate the dry ingredients previously sifted, and intercalate with the buttermilk, we do this at medium low speed. When we have added the last part of the dry ingredients it is time to add the water, this must be hot, this, in addition to the buttermilk and oil are the ingredients that give the moisture to our chocolate cake. At the end of the beating the mixture is rather liquid, however, with enough texture to be spongy and soft. We take our mixture to a buttered mold or with baking paper to a preheated oven at 180 °C for approximately 45 minutes or until a toothpick inserted comes out barely stained.

To decorate it I used a chocolate ganache, 200 grams of chocolate with 200 ml of whipping cream, melted in a bain-marie, cooled and then beaten with an electric mixer to add air and texture to the mixture and make it easy to handle with a piping bag.

With a good cup of coffee this cake tastes like glory, definitely. The original recipe has half the ingredients that I show here, the equivalent to prepare a mold of 20 centimeters in diameter. These quantities were enough for two molds and to share in my meeting yesterday and with my family, and the truth is that everyone was delighted with the result. This recipe is as good as they say on Instagram.

<div class="text-justify">Ciertamente no soy fanática de las redes sociales comunes, sin embargo, cuando deseo innovar en mis recetas uno de los sitios a donde recurro principalmente es a Instagram, en primera instancia porque allí las cosas son prácticas y rápidas, el formato lo exige así por decirlo de un modo, así que fácilmente me enamoro de alguna que otra receta, y en muchas ocasiones termino más decepcionada de contenta, sin embargo, esta fue una de esas ocasiones en las que estuve más que satisfecha con el resultado, y por ello les comparto el resultado. Las tortas húmedas de chocolate son sin duda de las más deliciosas y adictiva por así decirlo, y es que su textura y sabor invitan a comer una buena porción y probablemente pedir una segunda.

El día de ayer fui honrada con una invitación a una reunión con personas maravillosas que no podía rechazar y se me ocurrió que era justo y necesario compartir con ellos algo de lo que más disfruto hacer, preparar postres deliciosos para sacar algunas sonrisas. Esta preparación sin duda alguna seria la elegida y aprovecharía de tomar algunas fotografías para compartirles el proceso, los resultados fueron definitivamente los esperados según las críticas de la receta y la imagen de la misma en Instagram, de verdad es una receta que recrearía nuevamente. Claro está, no podía dejar de hacerle alguno que otro ajuste personal, solo porque lo creí conveniente, pero algo que ni siquiera se notaria en el sabor de la misma.

Las tortas húmedas de chocolate tienen como ingrediente estrella el aceite, que al unirse al cacao contrarresta ese efecto de dejar las preparaciones secas, que suele tener el mismo, y otra de las cosas que le presta humedad a la misma es el uso del buttermilk que no es más que la adición de un medio acido en la leche empleada en la preparación, y fue este el cambio que digamos, hice a la recta original, ya que la misma lleva solo leche, pero basta de parloteo y acompáñame para que veas como la prepare.

Para comenzar con esta preparación tamizamos los ingredientes secos, harina de trigo, polvos de hornear, sal y cacao sin azúcar, y reservamos, por otro lado preparamos el buttermilk que es la variación que le estoy haciendo a esta receta, para ello agregamos el zumo del limón a la taza de leche y revolvemos, veremos cómo se espesa y corta un poco la leche, reservamos ambas mezclas.

En el tazón de la batidora agregamos los huevos y batimos a velocidad máxima hasta conseguir el punto letra, en este momento adicionamos el azúcar en forma de lluvia sin dejar de batir, obtendremos una mezcla con textura similar a la de un merengue, en ese punto añadimos el aceite en forma de hilo sin dejar de batir.

Con el aceite ya integrado a la mezcla comenzamos a integrar los ingredientes secos previamente tamizados, e intercalamos con el buttermilk, esto lo hacemos a velocidad media baja. Cuando hayamos agregado la última parte de los ingredientes secos es momento de adicionar el agua, esta debe estar caliente, esto, además del buttermilk y en aceite son los ingredientes que le dan la humedad a nuestra torta de chocolate. Al finalizar el batido la mezcla es más bien liquida, sin embargo, con suficiente textura como para quedar esponjosa y suave. Llevamos nuestra mezcla a un molde enmantecado o con papel para horno a un horno pre calentado a 180 °C por aproximadamente 45 minutos o hasta que al introducir un palillo este salga apenas manchado.

Para decorarlo utilice una ganache de chocolate, 200 gr de chocolate con 200 ml de crema para batir, derretidos a baño de maría, lo enfriamos y ya frio batimos con batidor eléctrico para agregar aire y textura a la mezcla y sea fácil de manipular con una manga.

Con una buena taza de café esta torta sabe a gloria, definitivamente. La receta original tiene la mitad de los ingredientes que acá les muestro, el equivalente para preparar un molde de 20 centímetros de diámetro. Estas cantidades alcanzaron para dos moldes y compartir en mi reunión de ayer y con mi familia, y la verdad es que todos quedaron encantados con el resultado. Esta receta si es tan buena como lo dicen en Instagram.
