Happy evening dear friends, I hope you had a great day.... In this opportunity, I will explain you "step by step" how to prepare some delicious "spinach empanadas with cheese and meat". This time, I thought it was fantastic to knead the corn flour with spinach and the result was exquisite!

The magic of this recipe is found in the appetizing soft and crunchy consistency that our empanadas acquire during the baking process... Let's put on our aprons and start our wonderful process...

> Feliz noche queridos amigos, espero que hayan pasado un día genial... En ésta oportunidad, les explicaré "paso a paso" como preparar unas deliciosas "empanadas de espinaca con queso y carne". En ésta ocasión, me pareció fantástico amasar la harina de maíz con espinaca y el resultado fue exquisito!

> La magia de ésta receta la encontramos en la apetitosa consistencia suave y crocante que adquieren nuestras empanadas en el proceso de cocción... Pongámonos el delantal y empecemos nuestro maravilloso proceso...

* The first step is to add to a bowl: 1 cup of precooked corn flour, 1 heaping tablespoon of wheat flour, 1 teaspoon of salt and 1 tablespoon of sugar (mix). The wheat flour will add a fabulous texture to our recipe.

>* El primer paso será, añadir a un bowl: 1 taza de harina de maíz precocida, 1 cucharada colmada de harina de trigo, 1 cucharadita de sal y 1 cuchara de azúcar (mezclamos). La harina de trigo aportará una fabulosa textura a nuestra receta.

* Wash well our spinach leaves (1 cup), let them soak for 15 minutes in water with white vinegar. Strain and wash again before proceeding to blend.

>* Lavamos bien nuestras hojas de espinacas (1 taza), las dejaremos remojar durante 15 minutos en agua con vinagre blanco. Colamos y volvemos a lavar antes de proceder a licuar.

* Add the spinach to the blender and blend until well integrated.

>* Incorporamos las espinacas al vaso de la licuadora, licuamos hasta integrar bien.

* Add the spinach juice to the flour mixture that we had reserved... The dough should have a soft and manageable texture. For 1 cup of flour we must put 1 cup and 1/2 of liquid.

* To hydrate the flour, let it stand for 20 minutes.

>* Agregamos el jugo de espinaca a la mezcla de harina que teníamos reservada... La masa nos debe quedar con una textura suave y manejable. Para 1 taza de harina debemos colocar 1 taza y 1/2 de líquido.

>* Para hidratar la masa la dejaremos reposar durante 20 minutos.

* We roll out our dough to proceed to the filling... I love the empanadas to be very "thin", but I leave this step to your choice.

>* Extendemos nuestra masa para proceder a rellenar... me encanta que las empanadas queden muy "delgadas·, pero éste paso se los dejo a su elección.

* We proceed to fill with our appetizing cheese... we will leave space at the edges to prevent it from breaking during the cooking process.

>* Procedemos a rellenar con nuestro apetitoso queso... dejaremos espacio en los bordes para evitar que se rompa durante el proceso de cocción.

* Fold and cut the edges, I suggest using a round plate.
