### **How To Make Lumpy Dough**
In this presentation I wanted to bring you some homemade lumpias that are very tasty, and I mainly want to make the preparation of the dough which is essential, it is very simple and quick. We only use three ingredients for the dough, we will have an ideal step by step.

The lumpia or spring rolls, as they are also called, consist of prepared dough and a stew based on vegetables, chicken and any other meat you want. All very well chopped, we stretch portions of dough and fill with the stew, then roll and fry with very hot oil, we take it out and we are golden brown and very crispy. For this I give you the recipe immediately.

>Las lumpia o rollitos de primavera, como también se les llama, consisten en el preparado de masa y un guiso a base de verdura, pollo y cualquier otra carne que desees. Todo muy bien picado, estiramos porciones de masa y rellenamos con el guiso, luego enrollamos y freímos con aceite muy caliente, lo sacamos y nos quedan doraditas y muy crocantes. Para ello les doy de inmediato la receta.

#### **Ingredients For The Dough:**

- 2 cups of flour
- 1 teaspoon of salt
- ½ cup of water

---

>#### **Ingredientes Para La Masa:**

>- 2 tazas de harina
>- 1 cucharadita de sal
>- ½ taza de agua

#### **Preparation:**

In a bowl place the flour, then sprinkle the salt and little by little, pour the water. As we knead to integrate everything, the dough is ready when it does not stick to the fingers. Immediately we move it to the table and continue kneading it, leaving it to rest in a bowl for about 15 minutes. During this time we chop all the ingredients for the filling.

>En un bol colocamos la harina, luego esparcimos la sal y poco a poco, le vamos vertiendo el agua. A medida que vamos amasando para integrar todo, la masa está lista cuando no se pega de los dedos. De inmediato la pasamos a la mesa y seguimos amasándola, dejándola reposar en un bol por unos 15 minutos. En este lapso picamos todos los ingredientes para el relleno.

#### **Ingredients For The stuffing:**

- 100 g of chicken in strips
- 100 g of smoked chicken cutlet 
- 100 g of cabbage
- 50 g of paprika sliced in julienne
- 50 g of sweet bell pepper sliced in julienne
- 50 g of onion sliced in julienne
- 50 g of sweet and sour sauce already seasoned with pepper 
- Oil (enough for frying)
- 2 tablespoons of water and a teaspoon of flour
- 2 teaspoon of salt

>- 100 g de pollo en tiras
>- 100 g de chuleta de ahumada 
>- 100 g de repollo
>- 50 g de pimentón rebanado en juliana
>- 50 g ají dulce rebanado en juliana
>- 50 g de cebolla rebanada en juliana
>- 50 g de salsa agridulce ya condimentada con pimienta 
>- Aceite (suficiente para freír)
>- 2 cucharadas de agua y una cucharadita de harina
>- 2 cucharadita de sal

#### **Preparation of the filling:**

We chop all the ingredients, I had already advanced this step. Everything should be chopped in julienne strips, the chicken and the cutlet we chop it. Now we preheat a frying pan or cauldron with oil. When it is very hot, we begin to add all the ingredients and we sauté so that everything is sautéed. We add the salt and the sweet and sour sauce and stir to integrate, leave it for five minutes and lower the fire, we wait for everything to cool down.

> Picamos todos los ingredientes, ya había adelantado este paso. Todo debe estar picado en juliana, el pollo y la chuleta la picamos. Ahora precalentamos un sartén o caldero, con aceite. Cuando esté bien caliente,  comenzamos a agregarle todos los ingredientes y vamos salteando para que todo se sofriera. Le agregamos la sal y la salsa agridulce y removemos para integrar, dejamos cinco minutos y bajamos del fuego, esperamos que todo se enfríe.

While this time passes, we take the dough, chop it into small pieces, stretch it with a rolling pin, making sure it is very thin, once stretched, we place the filling on top of the dough. We proceed to fold the sides and then we roll it up, before finishing. Place the two tablespoons of water in a small container, pour the flour and mix. With this preparation we are going to glue the end of the lumpias, so that they do not open.

> Mientras pasa este tiempo, tomamos la masa, picamos trozos pequeños, la estiramos con un rodillo, procurando que quede bien fina, ya estirada, le vamos colocando el relleno en la parte superior de la masa. Procedemos a doblar los lados y luego vamos enrollando, antes de terminar. Colocamos las dos cucharadas de agua en un envase pequeño, le vaciamos la harina y mezclamos. Con esta preparación vamos a pegar la terminación de las lumpias, para que no se abran.
