Saludos, ya huele a  navidad y con ella llegan un sin fin de tradiciones entre ellas las culinarias, siempre para estas fechas en Venezuela se prepara un plato típico llamado hallaca, realmente delicioso, para mí lo mejor de el es su realización pues se acostumbra a prepararlo en compañía de amigos y familiares debido a que su proceso es algo largo y laborioso.
 </div>

Este año como las realicé en el campo no compre las hojas para las hallacas, por lo cuál decidimos sacarlas directamente de las matas de topocho de mi patio, ellas son muy económicas, cuestan en esta zona 1$ el kilo, pero si las sacamos nosotros mismos garantizamos que vamos a tener hojas buenas y frescas.

Se realiza una pequeña exploración, seguidamente se seleccionan las hojas más grandes y sanas, yo uso hojas como las que se ven en la imagen, estás hojas se usan para envolver la hallaca, le da un sabor realmente espectacular. 
<br />
Luego se cortan y se pasan por candela ellas tiene un color verde mate y al cocinarlas quedarán brillantes, es muy importante realizar este proceso adecuadamente para que las hojas no se partan cuando las usemos, posteriormente se lavan, se secan y se reservan para su posterior uso.

Para preparar la masa se realiza un caldo con gallina, se coloca la misma en abundante agua, con sal, ajo, cebolla, ají, una vez que este suave la gallina, se saca y se reserva ese caldo para ser usado junto a la harina de maíz.

Para realizar el guiso usé, 4 kilos de pulpa de res, 200 gramos de ajo, cilantro, cebollín, ajo porro, 500 gramos de cebolla y ají. Primeramente cocinamos la carne con abundante agua, cuando esté suave la sacamos.
<br />
En un caldero colocamos medio litro de aceite onotado, cuando esté caliente incorporamos los aliños y cocinamos por 5 minutos, a continuación incorporamos la carne picada en cubos y dejamos cocinar hasta que esté suave.
<br />
Algo opcional es colocarle aceitunas y alcaparras, yo le coloco 100 gramos de cada una, las lavo muy bien para poder incorporarlas.

 </div>

Al caldo de pollo le incorporamos la harina poco a poco y vamos amasando, yo use 2 kilos de harina, la masa debe quedar suave, a mi me gusta que quede muy tierna, tanto que pueda manipularla con una cuchara. Para darle color le coloco 100 ml de aceite onotado.

Una vez limpia las hojas, lista la masa y el guiso se procede al armado de las hallacas, para ellos se usan algunos adornos,  yo use 200 gramos de cebolla picada en aros, pasas, aceituna rellenas y pimentón en tiras.
<br />
Se agarra un trozo de hoja, se coloca un toque de aceite onotado y se esparce por la misma, sobre el se coloca un poco de masa, con una cucharada es suficiente, seguidamente se aplana la masa y sobre ella se coloca una cucharada de guiso, y sus respectivos adornos, finalmente se envuelve y se amarra con pabilo. Luego se montan a hervir por 45 minutos, se bajan del fuego, se dejan reposar y están listas para ser degustadas, con esta receta me salen 60 hallacas, espero puedan disfrutar de una rica cena navideña en compañía de sus seres queridos.
