As most of you know, Argentina is distinguished in the world for its high quality meats and wine production. The latter precisely in the province of Mendoza and this is due to the climate of the area, which is ideal for the production of vineyards of very high quality,

Como la mayoría de ustedes saben, Argentina se distingue en el mundo por  su producción de vino,  precisamente en la provincia de Mendoza y esto se debe al clima de la zona, que es el ideal para la producción de viñedos de muy alta calidad, en Mendoza caen 300 mililitros  de agua al año en forma de lluvia, esta poca cantidad de agua aunado al clima desértico y poco húmedo hace que el azúcar en las uvas sea más concentrado lo que repercute en un vino de alta calidad.

La ruta del vino se realiza en Mendoza, Valle de Uco y San Rafael. Por encontrarme en San Rafael conocí la bodega Rubio. Una Empresa que además de plantar viñedos, tienen otras siembras frutales tales como peras, duraznos, ciruelas, y olivares. 

Fabrican mermeladas, frutas deshidratadas y procesan el aceite de oliva. Las pequeñas bodegas son llamadas boutiques y la mayoría de su producción es exportada a otros países. Por lo general son vinos exclusivos que solamente los conseguirás en sitio. Del recorrido por esta bodega aprendí muchas cosas que las quiero compartir con ustedes

When the grapes are harvested, they are fermented for 8 to 10 days. In this fermentation process, the sugar in the grape juice becomes alcohol. In the case of red wine, it is fermented with the skin, since it is the skin that gives the wine its color. 

After the yeast found in the grape skin has consumed all the sugar in the juice, the fermentation product is passed through a press, separating the fermented grape juice from the skin and seeds, at which point the wine is halfway through the winemaking process.

After pressing the must, the resulting juice is taken to a vat to stabilize and decant some of the particles that still remain from the pressing process. During this decanting process, it is passed from vat to vat until it is transferred to a tank. Once the wine arrives in the tank, it is filtered and then it goes to the refrigerator where it spends from 5 months to 1 year, this is the time where the wine is macerated in the cellar and from there it is bottled.

Al cosechar los granos de uvas, son llevados a fermentar por espacio de 8 a 10 días. En este proceso de fermentación el azúcar del jugo de la uva pasa a ser alcohol.

 En el caso del vino tinto se fermenta con la piel, ya que que ésta  es quien da el color al vino. Luego que la levadura que se encuentra en la piel de la uva  se ha consumido toda el azúcar del jugo,  se pasa este producto de la fermentación por una prensa, apartando el jugo de uva fermentado,  de la piel y semillas, en este momento el vino esta a la mitad de su proceso de elaboración. 

Luego del prensado el mosto, el jugo resultante se lleva a un tacho para que se estabilice y decante de algunas partículas que todavía le quedan del proceso de prensado. En esta decantación se va pasando de tacho en tacho hasta que se pasa a un tanque. Una vez que el vino llega al tanque, se filtra y pasa a la nevera donde pasa de 5 meses a 1 año, es el tiempo donde se macera el vino dentro de la cava y de allí se embotella.

- Del  remanente del primer  prensado se pueden hacer otros productos derivados de la uva, como es el caso del aceite de las semillas usados en medicina,  y productos para la cosmetología. 
 -Es importante que el corcho que se le coloque al vino que va a durar tiempo sea de alcornoque para que el vino no se pique.

- Los viñedos se siembran con el sistema de espalderas y se orienta de norte a sur, de manera que lleve sol todo el día,  Esto permite madurar con toda la concentración de azúcar necesaria en la uva para hacer un vino calidad.
