This is my favorite go-to recipe that I meal prep on the weekends. The ironic thing about being in culinary school is you don’t have the time (or energy) to cook every night. I love this dish because not only is it super clean, but it’s ridiculously easy to throw together - anyone can make this! Additionally, it’s incredibly versatile - there’s a million different ways you could make this. Be creative! Feel free to swap out some of the ingredients for your favorite vegetable or grain.
Buddha Bowls, or macro bowls, follow a simple principle - _balance_.
**⅓ grains** - brown rice, quinoa, soba noodles, your favorite grain
**⅓ legumes** - black, pinto, chickpea, lentils, your favorite bean
**⅓ veggies** - zucchini, sweet potato, kale, asparagus, mix it up
**Sauce/Toppings** - so many options here! Hummus, tahini, sauerkraut, pumpkin seeds to name a few.
Of course, if you’re trying to limit grains, or beans, for any reason you can increase one, or both of the other food groups. Make it your own!
Here’s a preview of my most recent buddha bowl I made with what I had leftover after meal prepping on Sunday.
**Grains**
I like to use my grains as my base. I overcooked mine so it came out a little sticky, but still tasty! Make your rice, or your grain of choice, with vegetable broth for extra flavor!

**Legumes**
I chose lentils for my beans as they pack a ton of protein & I just love them. I like to soak all of my beans for optimal digestion before I cook them in vegetable broth, or if you’re in a pinch you can always use canned. If you’re sitting at home on a sunday, just make a big batch of beans while you’re watching Netflix- way better for you than beans that have been pressure cooked in a can. End rant.

**Veggies**
I steamed some kale and tossed in lemon juice and fresh, minced garlic. An easy way to add flavor to an otherwise bitter green. I also used zucchini that I sauteed in a little bit of olive oil, sea salt & pepper to taste.

**Sauce/Toppings**
I made a ginger carrot almond sauce from this recipe - http://www.coconutandberries.com/2014/06/06/macro-bowl-carrot-ginger-almond-sauce/. This seriously makes the dish for me. I could eat it by itself. It’s that good. If you’re in a pinch, a little olive oil & a squeeze of lemon will do. Experiment with different spices too, like cumin or red pepper flakes.
