I am trying my second attempt at making apple cider vinegar at home. :) I am using the @lynds method of ACV making, except that mine is in three quart jars instead of a big bucket, lol. I tried to find her original post about it, but I couldn't. Y'all know how impossible the old blockchain is to search; always a peeve of mine!

So I have been collecting cores and skins (yeah, I know the skins have a lot of the vitamins but I can't chew them anymore because of my teeth, so... ) in my freezer for quite some time. Today I took the scraps from the apple I ate yesterday and two sandwich size baggies of scraps out of the freezer to start the ACV. As I recall, last time I tried this the volume shrunk down quite a bit when all was said and done? So out of three quart jars maybe I'll get one quart of ACV?

I didn't have any cheesecloth on hand so my covers to keep out fruit flies and still let it breathe was paper towel. Don't knock it, it worked! :D
The last time I tried making ACV it actually molded, so I'm really hoping this doesn't happen again. :( It was after I had already strained it, as I recall, that the molding happened! So I'm not sure why. Maybe it wasn't done fermenting and so capping it too soon was what caused it?

They are now chilling in the back of a deep cupboard. I have one more apple in my fridge to eat, so when I've done so there's plenty of room to add those scraps to the jar on the left, lol.
If y'all have any insight as to why it may have molded last time, please feel free to share them! I keep my apartment pretty hot, which may be a factor. It's cool now because it's spring and we're right in that middle ground of not too hot/not too cold, but in the summer I barely ever use the little wall a/c that I have, and even when I do I set it to somewhere between 75-80 degrees. In the winter the heater is set to 80 degrees, too. I like warmth. I am a cat. Meow. ;)
